Ground Beef

Savory Shepherd’s Pie

1 lb. ground beef

¼ c. onion, chopped

¼ c. green pepper, chopped

1 can condensed vegetable soup

dash of thyme

seasoned mashed potatoes about 1 cup

Brown beef and cook onion and green pepper until tender; stir in soup and thyme.  Spoon into 1 qt. casserole.  Place potatoes in mounds around edge of casserole.  Bake in a 425 degree oven for 15 minutes.

Miss Hullings Sour Cream Noodle Bake

1  8 oz. pkg. medium noodles

1-1/2 lbs. ground chuck

black pepper to taste

garlic powder to taste

2 cans tomato sauce

1 c. sour cream with 1 T. flour

1/2 c. onion, chopped

1 c. sharp cheddar cheese, shredded

Brown meat, add pepper, garlic powder, tomato sauce and onions  Cook for five minutes.  Cook noodles as usual. Combine sour cream, flour and noodles.  Alternate layers of noodles and meat in 2.5 qt. casserole, beginning with noodles and ending with meat.  Top with cheese.  Bake 350 degrees for 20 minutes.

Ranch Hand Beans

1/4 lb. bacon (cup up)

1 lb. ground beef

1 large onion 9chopped)

1 (1 lb. 14 oz. can pork and beans

1-1 lb. can stewed tomatoes

1/2 c. brown sugar

1/2 t. chili powder

dash celery salt

Cook bacon until crisp and drain.  Pour most of the bacon fat out of the skillet; add ground beef and onion.  Cook until browned.  Combine with other ingredients, saving a bit for top.  Spoon mixture into a 1-1/2 qt. casserole.  Bake at 300 degrees for 1-1/2 hrs.
